Tangy Omelette
Ingredients:
- 1/2 onion, finely diced
- 1 large tomato, finely chopped
- 2 eggs
- Seasoning of your choice (e.g., black pepper, paprika, herbs)
- Salt to taste
- Cooking oil
Instructions:
1. Heat a tablespoon of cooking oil in a non-stick pan over medium heat.
2. Add the finely diced onions to the pan and sauté until they turn translucent and start to brown slightly.
3. Once the onions are cooked, add the finely chopped tomatoes to the pan. Allow the tomatoes to cook down until they are soft and pulpy, releasing their juices.
4. Season the onion and tomato mixture with your choice of seasoning and add salt to taste. Stir well to combine the flavors.
5. In a separate bowl, beat the eggs until they are well mixed.
6. Pour the beaten eggs evenly over the cooked onion and tomato mixture in the pan. Allow the eggs to set slightly around the edges.
7. Carefully flip the omelette over to cook the other side until it is golden brown and cooked through.
8. Once both sides are cooked to your liking, transfer the omelette to a serving plate.
9. Garnish with additional seasoning or herbs if desired.
10. Slice the omelette and serve hot. Enjoy your tangy tomato omelette!
