Mediterranean Inspired Salad Recipe

Servings: 4 servings

Ingredients:

- 6 cups salad mix (such as lettuce, arugula, spinach)

- 1 cucumber, cut into cubes

- 1 cup cherry tomatoes, halved

- 1 can (15 oz) chickpeas, drained and rinsed

- 1/2 cup green olives, chopped

- 2 tablespoons sesame seeds

For the Dressing:

- 1/4 cup tahini sauce

- Juice of 1 lemon

- 1/2 teaspoon pepper

- 1/2 teaspoon salt

Preparation Time: 15 minutes





Instructions:

1. In a large salad bowl, add the salad mix as the base.

2. Arrange the cut cucumber, cherry tomatoes, boiled chickpeas, and chopped green olives on top of the salad mix.
