Mediterranean Inspired Salad Recipe

Servings: 4 servings

Ingredients:

- 6 cups salad mix (such as lettuce, arugula, spinach)

- 1 cucumber, cut into cubes

- 1 cup cherry tomatoes, halved

- 1 can (15 oz) chickpeas, drained and rinsed

- 1/2 cup green olives, chopped

- 2 tablespoons sesame seeds

For the Dressing:

- 1/4 cup tahini sauce

- Juice of 1 lemon

- 1/2 teaspoon pepper

- 1/2 teaspoon salt

Preparation Time: 15 minutes





Instructions:

1. In a large salad bowl, add the salad mix as the base.

2. Arrange the cut cucumber, cherry tomatoes, boiled chickpeas, and chopped green olives on top of the salad mix.

3. Sprinkle the sesame seeds evenly over the salad.

4. In a small bowl, prepare the dressing by whisking together the tahini sauce, lemon juice, pepper, and salt until smooth.

5. Drizzle the dressing over the salad mixture in the bowl.

6. Gently toss the salad to coat all the ingredients evenly with the dressing.

7. Taste and adjust seasoning, if needed, adding more salt, pepper, or lemon juice according to your preference.

8. Serve the Mediterranean salad immediately as a refreshing and nutritious meal on its own, or as a side dish alongside grilled chicken, fish, or falafel.
