Sprouts Salad - Mung Bean
Ingredients:
- 1 cup Mung Beans
- 1 medium Cucumber, diced
- 1 small Onion, finely chopped
- Handful of fresh Cilantro, finely chopped
- 1/2 Lemon
- Black Salt, to taste
- Pepper, to taste
Instructions:
1. Sprouting the Mung Beans:
- Rinse the mung beans thoroughly and soak them in enough water to cover for about 8 hours or overnight.
- After soaking, drain the water and transfer the mung beans to a sprouting jar, sprout maker, or any container with a lid.
- Place the container in a warm, dark place, and allow the mung beans to sprout. This usually takes about 1-2 days, depending on the temperature.
- Rinse the sprouts with water every 8-12 hours to keep them moist.
2. Preparing the Salad:
- Once the mung beans have sprouted to your desired length (about 1/4 to 1/2 inch), rinse them under warm water for about 3 minutes to remove any residual husks or dirt and to remove any bacteria. (since sprouts grow in moist, warm conditions)
- Transfer the sprouted mung beans to a large salad bowl.
3. Adding the Vegetables:
- Add the diced cucumber and finely chopped onion to the bowl with the sprouted mung beans.
4. Seasoning:
- Squeeze the juice of half a lemon over the salad.
- Sprinkle black salt and pepper to taste.
- Add the freshly chopped cilantro on top.
5. Mixing and Serving:
- Gently toss all the ingredients together until everything is well combined and evenly coated with the lemon juice and seasonings.
- Taste and adjust the seasoning if needed.
- Serve the refreshing sprout salad immediately as a light and nutritious meal or as a side dish to complement any main course.
Tips:
- You can customize this salad by adding other vegetables such as tomatoes, bell peppers, or carrots.
- For extra flavor, you can also add a dash of chaat masala or cumin powder.
- This salad is best enjoyed fresh but can be refrigerated for up to 2 days in an airtight container.
