Pineapple Kesari (Semolina pudding)
A traditional South Indian sweet dish, Kesari, gets a tropical twist with the addition of juicy pineapple pieces, creating a burst of fruity sweetness in every bite. This aromatic dessert combines the rich texture of roasted semolina (rava) with the tangy-sweet essence of caramelized pineapples, perfumed with saffron and cardamom. Ingredients:
- Semolina/Rava - 1 cup
- Sugar - 2 cups
- Water - 3 cups
- Pineapple - 1 cup, chopped small
- Saffron (soaked in water for a nice yellow color) or yellow food coloring
- Cardamom powder
- Ghee - 1 cup
- Cashews - 8 to 10, chopped
- Raisins - 8 to 10

Instructions:
In a pan, sauté the chopped pineapple pieces in 1 tablespoon of ghee until they are slightly caramelized.
Add 3 cups of water to the pineapples, along with saffron (or yellow food coloring). Allow it to come to a boil.
In another pan, heat 1 tablespoon of ghee. Add the semolina (rava) and sauté until it turns aromatic and slightly golden brown. Keep stirring to avoid burning.
Once the pineapple mixture is boiling, slowly add the roasted semolina into it, stirring continuously to avoid lumps.
Add 2 cups of sugar to the mixture and continue stirring.
Gradually add 2 more tablespoons of ghee into the mixture at intervals, allowing it to incorporate well.
Sprinkle cardamom powder over the mixture and mix thoroughly.
In a small pan, roast the chopped cashews and raisins in a little ghee until they turn golden brown and plump.
Add the roasted cashews and raisins to the pineapple and semolina mixture. Mix everything well.
Pineapple Kesari is ready to be served hot or warm as a delightful dessert or sweet treat.
