Smoked Salmon Pinwheel Sandwiches

Ingredients:

- 8 slices of bread (white or whole wheat)

- 200g smoked salmon

- 200g cream cheese, softened

- 2 tablespoons fresh chives, finely chopped

- Salt and pepper to taste

Instructions:

1. In a small mixing bowl, combine the softened cream cheese, finely chopped chives, a pinch of salt, and a dash of pepper. Mix well until everything is evenly incorporated. Taste and adjust seasoning if needed.

2. Using a rolling pin, gently flatten each slice of bread. This makes it easier to roll up the pinwheels.

3. Spread a generous layer of the cream cheese mixture evenly onto each flattened slice of bread. Make sure to go all the way to the edges.

4. Place slices of smoked salmon evenly over the cream cheese layer on each bread slice. You want a nice, even layer that covers the entire surface.

5. Carefully roll up each bread slice into a tight spiral, starting from one end and rolling towards the other. The cream cheese and salmon should be tightly enclosed within the bread.

6. Using a sharp knife, slice each roll into bite-sized pieces.

7. Arrange the smoked salmon pinwheel sandwiches on a serving platter. They can be served as is, or with additional garnishes like a sprinkle of fresh chives on top.

8. These pinwheel sandwiches are perfect for parties, brunches, or as a delicious snack. The combination of creamy cheese, savory smoked salmon, and fresh chives is sure to be a hit!
