Veggie loaded Soupy Egg Noodles

Veggie loaded soupy egg noodles

Ingredients:

- 200g egg noodles

- 1 medium carrot, julienned

- 1 small onion, thinly sliced

- 1 cup broccoli florets

- 4 cups vegetable broth

- 2 tablespoons soy sauce

- 1/2 teaspoon black pepper

- 1/4 teaspoon cayenne pepper (adjust to taste for spiciness)

- Salt to taste

- 1 teaspoon Asian herb blend (such as a mix of dried basil, cilantro, and Thai basil)

- 2 cloves garlic, minced

- 1 tablespoon oil (olive oil or vegetable oil)

- Optional: sliced green onions for garnish


Instructions:

1. Heat oil in a large pot over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add sliced onions and julienned carrots. Sauté for 2-3 minutes until slightly softened.

2. Pour in the vegetable broth and bring to a simmer. Let it simmer for 5 minutes to allow the flavors to meld. Add soy sauce, black pepper, cayenne pepper (adjust to desired spiciness), salt to taste, and Asian herb blend. Stir well to combine.

3. In a separate pot, cook the egg noodles according to package instructions until al dente. Drain and set aside.

4.Once the carrots and onions are tender, add the broccoli florets to the soup. Let it simmer for an additional 3-4 minutes until the broccoli is tender-crisp.

5. Add the cooked egg noodles to the pot of spicy soup. Stir gently to combine, ensuring the noodles are heated through.

6. Taste the soup and adjust the spiciness and seasoning according to your preference. Add more cayenne pepper for extra heat if desired, or adjust salt and pepper as needed.
